Mushroom & Spinach Cauliflower Rice

 10 oz frozen riced cauliflower or 1 head cauliflower, chopped fine
 1 tbsp soy sauce or Bragg’s Aminos
 1 tbsp olive oil
 0.50 cup chopped onion
 2 garlic cloves, minced
 3 cups sliced mushrooms
 2 cups spinach

Cook cauliflower rice according to instructions on the package.

Heat olive oil in a skillet and add onions and cook until soft.

Toss in mushrooms, sauté until moisture evaporates.

Add garlic, cauliflower rice and soy sauce. Stir until cauliflower rice has absorbed soy sauce, add salt and pepper as desired.

Top mixture with spinach, stir and cook until wilted.
