Split Pea Soup

Yields6 Servings

 2 lbs dried green or yellow split peas, rinsed
 1 onion
 3 celery ribs
 2 large carrots
 1 garlic clove
 ¼ cup chopped fresh parsley
 6 cups water or vegetable broth (water works just fine)
 ½ tsp ground black pepper
 1 tbsp salt if using water, less if using broth, or to taste
 1 bay leaf

Combine all ingredients.


Cook in a slow cooker on low for 7 to 8 hours, OR


in a slow cooker on high for 3 to 4 hours, OR


in an instant pot for 15 min.
