Thai Red Curry

 2 red or sweet potatoes
 3 large carrots, diced
 0.50 medium onion, diced
 1 tbsp grated fresh ginger
 2.50 cups water
 3 cloves garlic, minced
 1 cup red lentils
 14 oz can diced tomatoes
 1 cup coconut milk
 5 tbsp red curry paste
 0.50 tsp fine salt

Cook potatoes, carrots, and onion for about 3 minutes.

Stir in ginger and garlic.

Add water.

Stir in lentils, tomatoes, coconut milk, curry paste, and salt.

Cook until lentils and veggies are tender (20ish minutes).
